CARAMEL COOKIE CUPS

INGREDIENTS
Cookie Cups:
  • 1 cup unsalted butter room temperature
  • 1/2 cup granulated sugar
  • 1 cup light brown sugar packed
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp sea salt
  • 2 tsp vanilla extract
  • 2 large eggs room temperature
Caramel:
  • 1 cup granulated sugar 200g
  • 1/4 cup water
  • 150 ml heavy whipping cream room temperature
  • 1/2 cup unsalted butter 100g, room temperature
Ganache:
  • 250 g good quality dark chocolate finely chopped
  • 125 ml heavy whipping cream
